White Pepper
Flavor profile
Black pepper's paler, stranger brother — the same berry with the skin removed. Earthier, muskier, and the pepper Moroccan kitchens quietly prefer for blends and pale sauces, where it seasons without speckling.
How to use
Soups, white sauces, mashed potatoes, marinades — and it's already inside our Chermoola and Souk Blend, so you know how this house feels about it.
The spice had to earn the jar
Chosen and bought through women's cooperatives in Morocco, and packed in small batches in Manhattan. A beautiful jar does not get a free pass — the spice has to cook.
Artwork by Kawtar Barraz
The jar wears an original collage by Moroccan artist Kawtar Barraz — a woman carrying her white pepper overhead, one of seven in her single-spice series. Clear glass, gold lid, made to refill and keep.
